About Raclette Food: Raclette is a Swiss Cheese which is semi-hard and is usually made from Cow’s milk and is sold in almost all western countries and can be bought online as well.The Raclette Swiss Food is made by heating cheese and also scraping the melted portion onto the boiled potatoes which has a sliced charcuterie, cornichons along with other treats.The word Raclette has been derived from French Verb Racier,which also means “to scrape” which has tradition of being one of the Switzerland’s most famed dishes. The Raclette Swiss Food originated several hundred years ago and the region was Canton of Valais, which is in the South-West region of the Switzerland.

The Raclette Cheese also got mentioned in the writings which dates back to 1291 and it was called “Bratchas” which means roasted cheese in Swiss-German.The Raclette looks pale yellow in color and perhaps a few small holes could be found in the creamy cheese Swiss. The semi-soft cheese were placed near the campfires by the local herdsmen of valleys in Swiss Alps during the travelling which would melt the block of cheese.The melted cheese was scraped off the block and then can be consumed with potatoes, other vegetables and onions which could be served with tea or kirsch along with a cherry brandy.

How to make Raclette Swiss Food:

Ingredients:

1. A pound of small white potatoes

2. Salt as per taste

3. A small jar of Cornichon or Gherkins and pickled items like Artichokes, small onions etc.

4. Assortment of cured meats such as ham, prosciutto, salami

5. Salad Greens

6. Half of the lemon

7. Pepper and salt

8. Vegetable oil as per requirement

9. I/2 a pound of Raclette Cheese (You can use Gruyere or Emmentaler if not using Raclette)

Instructions:

1. Preheat the broiler

2. Put potatoes in a large pot and also cover them with cold water

3. Add the tablespoon of salt and put them over high heat. Keep it uncovered and until the water boils while reducing the heat to low.The partially covered pot makes the heat to get the potatoes simmer and cooked easily.

4. Just drain the extra water in potatoes and also return it to the cover on pot keeping them warm. After that set the covered pot of potatoes on the table.

5. Set the table with Cornichons and then put the pickled items with meats on a serving tray.

6. Toss the salad greens in the large bowls and with a good squeeze of half lemon, with a drizzle of Olive oil and sprinkle of salt and pepper all according to taste.

7. Drizzle a bit of vegetable oil into the skilled into cast iron and rub it around with some kitchen towel.One has to put the skillet about 8 inches from the broiler elements and cook it until it gets melted and start bubbling with brown edges.

8. With the Raclette Swiss Food gets ready put some extra cheese and just put it under the broiler.

9. Once the cheese is ready use a spatula to slide and squidge it over the potatoes.

10. While the cheese gets cooked serve the potatoes, pickles and the meat into plates and eat it heartily.

The preparation time takes 10 minutes, cooking time is 30 minutes and serves 2-4 person.
